Rum Barbecue Sauce
Ingredients
1/4 cup dark rum | ||
3 cups onions, chopped | ||
1/2 cup canola oil | ||
1 tbs garlic, chopped | ||
1 (16oz) can Italian tomatoes, drained and chopped | ||
1 and 1/2 cups tomato puree | ||
2 tbs red pepper flakes | ||
2 tbs chili powder | ||
1 tsp ground cumin | ||
2 tbs dry mustard | ||
2 tbs sugar | ||
3 tbs white vinegar | ||
1 tsp salt | ||
1/2 tsp hot Hungarian paprika | ||
1 tbs maple syrup | ||
cayenne pepper to taste |
- Saute onions in oil until soft.
- Add garlic and cook for 2 minutes.
- Add tomatoes, tomato puree, pepper flakes, chili powder, cumin, dry mustard, sugar, vinegar, salt, paprika, maple syrup and rum.
- Cook over low heat for about an hour.
- Add cayenne pepper to taste.
- Cool and puree in a blender until smooth.
