Curry Mayonnaise
Ingredients
1 tbs of canola oil | ||
1 small onion, chopped | ||
1 tbs curry powder | ||
2/3 cup chicken stock | ||
1 tbs tomato paste | ||
1 tbs sweet chutney | ||
2 tbs lemon juice | ||
3/4 cup mayonnaise | ||
2 tbs light cream |
- Saute onion in oil for 5 minutes.
- Stir in curry powder.
- Add chicken stock, tomato paste, chutney and lemon juice.
- Bring to a boil then cool.
- Stir in mayonnaise and light cream to cooled mix.
- May be stored in refrigerator until ready to use.
