Stuffed Cherry Tomatoes
Ingredients
20 cherry tomatoes | ||
2 oz of soft goat cheese | ||
2 oz of ricotta cheese | ||
1 clove garlic, finely minced | ||
1 tbs parsley, finely chopped | ||
Dash of kosher salt and fresh cracked black pepper |
- Slice the tops from the tomatoes and hollow out and remove seeds.
- Add the cheeses garlic and parsley to a bowl and mix well until smooth. Season with salt and pepper.
- Spoon mixture into the tomatoes and refrigerate for several hours before serving.
