Stuffed Cherry Tomatoes


  • 20 cherry tomatoes
  • 2 oz of soft goat cheese
  • 2 oz of ricotta cheese
  • 1 clove garlic, finely minced
  • 1 tbs parsley, finely chopped
  • Dash of kosher salt and fresh cracked black pepper
  • Slice the tops from the tomatoes and hollow out and remove seeds.
  • Add the cheeses garlic and parsley to a bowl and mix well until smooth. Season with salt and pepper.
  • Spoon mixture into the tomatoes and refrigerate for several hours before serving.
