Stuffed Cherry Tomatoes
|20 cherry tomatoes|
|2 oz of soft goat cheese|
|2 oz of ricotta cheese|
|1 clove garlic, finely minced|
|1 tbs parsley, finely chopped|
|Dash of kosher salt and fresh cracked black pepper|
- Slice the tops from the tomatoes and hollow out and remove seeds.
- Add the cheeses garlic and parsley to a bowl and mix well until smooth. Season with salt and pepper.
- Spoon mixture into the tomatoes and refrigerate for several hours before serving.
