Baby Potatoes with Sour Cream and Caviar
Ingredients
30 baby new potatoes | ||
1 cup sour cream | ||
Kosher salt and black pepper to taste | ||
2-3 tbs caviar |
- Preheat the oven to 400 degrees.
- Prick the potatoes all over with a fork and place on a baking tray.
- Bake for 40 minutes or until fork tender.
- Cool at room temperature.
- Season with salt and pepper.
- Cut a large cross in the top of each potato, squeeze open, and top with a small dollop of sour cream and a little caviar.
