Caper Stuffed Hard Boiled Eggs
- 3 eggs, hard boiled and peeled
- 3 tbs mayonnaise
- 1 tsp Dijon mustard
- 1 tsp chopped capers
- Whole capers, for garnish
- Cut eggs in half lengthwise
- Remove yolks and mash with fork in a small bowl.
- Add mustard, mayonnaise and chopped capers.
- Blend together well.
- Spoon mixture into egg halves and top each half with a whole caper.
- Chill covered for several hours before serving.
