Caper Stuffed Hard Boiled Eggs
|3 eggs, hard boiled and peeled|
|3 tbs mayonnaise|
|1 tsp Dijon mustard|
|1 tsp chopped capers|
|Whole capers, for garnish|
- Cut eggs in half lengthwise
- Remove yolks and mash with fork in a small bowl.
- Add mustard, mayonnaise and chopped capers.
- Blend together well.
- Spoon mixture into egg halves and top each half with a whole caper.
- Chill covered for several hours before serving.
