Caper Stuffed Hard Boiled Eggs


  • 3 eggs, hard boiled and peeled
  • 3 tbs mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp chopped capers
  • Whole capers, for garnish
  • Cut eggs in half lengthwise
  • Remove yolks and mash with fork in a small bowl.
  • Add mustard, mayonnaise and chopped capers.
  • Blend together well.
  • Spoon mixture into egg halves and top  each half with a whole caper.
  • Chill covered for several hours before serving.
