Cauliflower Salad
Ingredients
4 cups raw cauliflower florets | ||
1 cup stuffed green olives, chopped | ||
2/3 cup green pepper, chopped | ||
1/2 cup onion, chopped | ||
1/2 cup roasted red peppers, chopped | ||
1/2 cup canola oil | ||
3 tbs lemon juice | ||
3 tbs wine vinegar | ||
kosher salt and fresh cracked black pepper to taste | ||
1/2 tsp sugar |
- Combine cauliflower, olives, green peppers, onion, and roasted red peppers.
- Add remaining ingredients to a bowl and whisk.
- Pour over vegetables.
- Chill for several hours then serve.
