Cauliflower Salad


  • 4 cups raw cauliflower florets
  • 1 cup stuffed green olives, chopped
  • 2/3 cup green pepper, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup roasted red peppers, chopped
  • 1/2 cup canola oil
  • 3 tbs lemon juice
  • 3 tbs wine vinegar
  • kosher salt and fresh cracked black pepper to taste
  • 1/2 tsp sugar
  • Combine cauliflower, olives, green peppers, onion, and roasted red peppers.
  • Add remaining ingredients to a bowl and whisk.
  • Pour over vegetables.
  • Chill for several hours then serve.
