Indian Tandoori Cooking

In India and Pakistan special charcoal-fired clay tandoor ovens are used for tandoori cooking. Traditionally, the food is marinated in a mixture of crushed garlic, grated fresh ginger, yogurt, lemon juice and many other spices. The meat is then threaded onto a spit and lowered over the hot coals into the ovens. A variety of foods, including chicken, fish and meat can cooked in this way. A super hot charcoal grill is a great way to replicate this type of cooking.
