Italian Tomato Bruschetta


  • 3 large ripe tomatoes, peeled, seeded and diced
  • 2 tbs fresh basil, chopped
  • 2 shallots, minced
  • 2 tsp dried oregano
  • 1 tbs extra virgin olive oil
  • 1 tbs extra virgin olive oil
  • kosher salt and fresh cracked black pepper to taste
  • 1 french baguette loaf, cut into 1 inch pieces
  • Parsley for garnish
  • Lemon zest for garnish
  • Add all ingredients, except for baguette in a non metal bowl.
  • Gently mix well.
  • Cut baguette into 1 inch slices and place on a baking sheet. Bake at 350 degrees for 5 to 7 minutes or until lightly browned.
  • Remove baguette slices from oven and place a table spoon of the tomato mixture on top of each slice.
  • Garnish with parsley and a little lemon zest.
