Marinated Grilled Swordfish
Ingredients
4 fresh swordfish steaks | ||
1/3 cup tomato paste | ||
1/4 cup dry red wine | ||
6 garlic cloves, sliced | ||

3 tbs cilantro | ||
2 tbs olive oil |
- In a small bowl. combine the tomato paste, wine, garlic and red pepper.
- Put mixture into sauce pan and bring to a boil.
- Reduce heat and simmer, covered for 1 hour, stirring occasionally.
- Press sauce through a wire mesh strainer and discard garlic.
- Stir in olive oil and cilantro.
- Cool sauce to room temperature.
- Add fish steaks to a shallow glass baking dish.
- Brush some of the cooled marinade over the fish.
- Marinate for 30 minutes at room temperature.
- Grill fish over hot coals for about 4 minutes, depending on thickness.
- Brush with marinade.
- Turn fish and cook for 3 minutes more or until fish flakes easily.
- Brush fish again with marinade.
- Remove fish to separate plates or a family style platter.
