Marinated Grilled Swordfish

Ingredients

4 fresh swordfish steaks
1/3 cup tomato paste
1/4 cup dry red wine
6 garlic cloves, sliced
6 garlic cloves, sliced
3 tbs cilantro
2 tbs olive oil
  • In a small bowl. combine the tomato paste, wine, garlic and red pepper.
  • Put mixture into sauce pan and bring to a boil.
  • Reduce heat and simmer, covered for 1 hour, stirring occasionally.
  • Press sauce through a wire mesh strainer and discard garlic.
  • Stir in olive oil and cilantro.
  • Cool sauce to room temperature.
  • Add fish steaks to a shallow glass baking dish.
  • Brush some of the cooled marinade over the fish.
  • Marinate for 30 minutes at room temperature.
  • Grill fish over hot coals for about 4 minutes, depending on thickness.
  • Brush with marinade.
  • Turn fish and cook for 3 minutes more or until fish flakes easily.
  • Brush fish again with marinade.
  • Remove fish to separate plates or a family style platter.
