Mixed Lettuce Salad


  • 1/2 cup red bell peppers
  • 1/2 cup grated carrots
  • 1 medium onion, sliced thin
  • 2 cups mayonnaise
  • 2 tbs sugar
  • kosher salt and fresh black pepper to taste

  • 8 slices crisp bacon, crumbled
  • 1 package of frozen peas, thawed
  • 1/2 head iceberg lettuce, shredded
  • Combine the sugar and mayonnaise, then mix well.
  • In a large salad bowl add the remaining ingredients.
  • Season with salt and pepper.
  • Add the dressing to the lettuce a little at a time and gently mix.
  • Reserve extra dressing for later use.
  • Refrigerate covered for at least one hour before serving.
