Pea Salad


  • 2 packages of frozen peas, cooked
  • 6 slices of bacon, cooked crispy and crumbled
  • 6 scallions, chopped
  • 1 tomato, chopped
  • 1 cup sour cream
  • juice from 1 lemon
  • 6 to 8 basil leaves, torn
  • kosher salt and fresh cracked black pepper to taste
  • Blanch peas in boiling water for 2 minutes.
  • Drain and place peas in a ice bath to stop cooking.
  • Add all ingredients to a non metal bowl and gently mix well.
  • Chill for at least one hour and serve in lettuce cups.
