|2 packages of frozen peas, cooked|
|6 slices of bacon, cooked crispy and crumbled|
|6 scallions, chopped|
|1 tomato, chopped|
|1 cup sour cream|
|juice from 1 lemon|
|6 to 8 basil leaves, torn|
|kosher salt and fresh cracked black pepper to taste|
- Blanch peas in boiling water for 2 minutes.
- Drain and place peas in a ice bath to stop cooking.
- Add all ingredients to a non metal bowl and gently mix well.
- Chill for at least one hour and serve in lettuce cups.
