- 1 stick of pepperoni, thinly sliced
- 1 medium onion, sliced into rings
- 1/4 lb of blue cheese, crumbled
- 2/3 cup extra virgin olive oil
- 1/3 cup wine vinegar
- 1 lb of spinach, stems removed and chopped
- kosher salt and black pepper to taste
- Mix oil and vinegar, add the pepperoni and crumbled blue cheese, season with salt and pepper
- Marinate for at least 8 hours or overnight.
- To serve, toss with spinach.
