Pepperoni Salad


  • 1 stick of pepperoni, thinly sliced
  • 1 medium onion, sliced into rings
  • 1/4 lb of blue cheese, crumbled
  • 2/3 cup extra virgin olive oil
  • 1/3 cup wine vinegar
  • 1 lb of spinach, stems removed and chopped
  • kosher salt and black pepper to taste
  • Mix oil and vinegar, add the pepperoni and crumbled blue cheese, season with salt and pepper
  • Marinate for at least 8 hours or overnight.
  • To serve, toss with spinach.
