|1 stick of pepperoni, thinly sliced|
|1 medium onion, sliced into rings|
|1/4 lb of blue cheese, crumbled|
|2/3 cup extra virgin olive oil|
|1/3 cup wine vinegar|
|1 lb of spinach, stems removed and chopped|
|kosher salt and black pepper to taste|
- Mix oil and vinegar, add the pepperoni and crumbled blue cheese, season with salt and pepper
- Marinate for at least 8 hours or overnight.
- To serve, toss with spinach.
