Vietnamese Fried Rice
Ingredients
3 tbs cooking oil | ||
1 large onion, coarsely chopped | ||
3 cloves garlic, sliced | ||
kosher salt and fresh cracked black pepper to taste | ||
2-4 Thai chilies, seeded and chopped | ||
1 tsp sugar | ||
1 tbs soy sauce | ||
1 tbs fish sauce | ||
3 cups cooked rice | ||
1/4 cup peas | ||
1/4 cup green beans, cut into 1 inch pieces | ||
1/4 cup carrots, sliced into thin strips | ||
1/4 cup carrots, sliced into thin strips |
- Cook rice according to package directions, then place in the refrigerator to chill for several hours or overnight
- Heat oil in a large saute pan or wok.
- Add the meat, onions, chilies and seasonings.
- Stir fry until meat is browned. About 3 minutes.
- Add the rice and stir -fry for another 5 minutes.
- Add vegetables and stir into rice and meat mixture.
- Just before serving, add eggs.
- Over medium heat, stir eggs carefully through rice until they are cooked.
- Serve hot with a salad of leaf lettuce, cucumbers, fresh mint and parsley.
