Kale and Lentil Soup
|1 bunch of kale (12 oz) coarsely chopped|
|1 onion, minced|
|3 cloves garlic, minced|
|1 can of diced tomatoes in juice|
|1 stalk of celery, minced|
|1 cup lentils|
|4 cups chicken or vegetable stock|
|1 jalapeno pepper, minced|
|1/2 tsp ground cumin|
|1/4 cup lemon juice|
- Rinse the lentils.
- Place everything except the lemon juice in a large stock pot.
- Bring to a boil, cover and simmer for 1 hour.
- Stir in the lemon juice and serve.
