Lemon Lime Ice Cream Pie
Ingredients
1 pre baked (9 inch) graham cracker crust pie shell | ||
2 envelopes unflavored gelatin | ||
3/4 cup sugar | ||
1/4 cup lemon juice | ||
1/2 cup lime juice | ||
1 and 1/4 cups water | ||
1 tsp lemon zest, grated | ||
1 tsp lime zest, grated | ||
1 pint vanilla ice cream |
- Prepare the pre baked pie shell and cook completely.
- Mix together the gelatin and sugar. Set aside.
- Combine the lemon juice, lime juice and water and bring to a boil.
- Add the gelatin mixture and stir until dissolved.
- Remove the pan from the heat.
- Add the lemon and lime zests.
- Stir in the ice cream. Mix well.
- Chill until slightly thickened.
- Turn the filling into the pie shell.
- Freeze until set.
