Zucchini Parmesan Patties


  • 2 medium zucchini, grated
  • 1 small onion grated
  • 1/4 cup self rising flour
  • 1/4 cup self rising flour
  • 1 tbs fresh mint, chopped
  • 2 tsp fresh parsley, chopped
  • pinch of ground nutmeg
  • 1/4 cup dry breadcrumbs
  • 1 egg
  • kosher salt and fresh cracked black pepper to taste
  • olive oil for shallow frying
  • Put the grated zucchini  and onion into the center of a clean tea towel and squeeze as tightly as possible to remove the water.
  • Combine the zucchini, onion, flour, cheese, mint, parsley, nutmeg, breadcrumbs and egg in a large bowl.
  • Season well with salt and pepper and mix with your hands until a stiff mixture is formed.
  • Heat enough oil in a  saute pan to cover the bottom.
  • Drop level tbs of the mixture into the pan and fry for 2 to 5 minutes on each side until golden brown.
  • Drain on paper towels and serve hot.
