Zucchini Parmesan Patties
Ingredients
2 medium zucchini, grated | ||
1 small onion grated | ||
1/4 cup self rising flour | ||
1/4 cup self rising flour | ||
1 tbs fresh mint, chopped | ||
2 tsp fresh parsley, chopped | ||
pinch of ground nutmeg | ||
1/4 cup dry breadcrumbs | ||
1 egg | ||
kosher salt and fresh cracked black pepper to taste | ||
olive oil for shallow frying |
- Put the grated zucchini and onion into the center of a clean tea towel and squeeze as tightly as possible to remove the water.
- Combine the zucchini, onion, flour, cheese, mint, parsley, nutmeg, breadcrumbs and egg in a large bowl.
- Season well with salt and pepper and mix with your hands until a stiff mixture is formed.
- Heat enough oil in a saute pan to cover the bottom.
- Drop level tbs of the mixture into the pan and fry for 2 to 5 minutes on each side until golden brown.
- Drain on paper towels and serve hot.
