Artichoke Wild Rice Salad
|1 package of wild rice, cooked according to package directions|
|1/4cup green pepper, chopped|
|1/4 cup yellow pepper, chopped|
|1/2 cup scallions, chopped|
|1/2 cup pimento stuffed olives|
|2 (6oz) jars marinated artichoke hearts, drained and sliced|
|1/2 cup mayonnaise|
|1 tsp curry pepper|
- Cook the wild rice according to package directions. Let cool.
- Combine the rice, peppers, green onions, olives, artichoke hearts, mayonnaise and curry powder in a bowl, tossing lightly to mix.
- Chill covered until serving time.
