Artichoke Wild Rice Salad
Ingredients
1 package of wild rice, cooked according to package directions | ||
1/4cup green pepper, chopped | ||
1/4 cup yellow pepper, chopped | ||
1/2 cup scallions, chopped | ||
1/2 cup pimento stuffed olives | ||
2 (6oz) jars marinated artichoke hearts, drained and sliced | ||
1/2 cup mayonnaise | ||
1 tsp curry pepper |
- Cook the wild rice according to package directions. Let cool.
- Combine the rice, peppers, green onions, olives, artichoke hearts, mayonnaise and curry powder in a bowl, tossing lightly to mix.
- Chill covered until serving time.
