Artichoke Wild Rice Salad


  • 1 package of wild rice, cooked according to package directions
  • 1/4cup green pepper, chopped
  • 1/4 cup yellow pepper, chopped
  • 1/2 cup scallions, chopped
  • 1/2 cup pimento stuffed olives
  • 2 (6oz) jars marinated artichoke hearts, drained and sliced
  • 1/2 cup mayonnaise
  • 1 tsp curry pepper
  • Cook the wild rice according to package directions. Let cool.
  • Combine the rice, peppers, green onions, olives, artichoke hearts, mayonnaise and curry powder in a bowl, tossing lightly to mix.
  • Chill covered until serving time.
