Tex -Mex Pinto Beans
Ingredients
3 (15 oz) cans of pinto beans, drained and rinsed | ||
1 cup celery, chopped | ||
1/2 cup green pepper, chopped | ||
1 jalepaeno pepper, chopped | ||
1/2 cup chopped onion | ||
2 cloves garlic, chopped | ||
1 cup tomato, chopped | ||
1 (4 oz) can of green chilies, chopped | ||
2 cups cheddar cheese, shredded | ||
3 tsp chili powder | ||
3 tsp chili powder | ||
1 cup mayonnaise | ||
1 cup tosada chips, crushed |
- Combine the beans, with all ingredients except for the tosada chips.
- Mix well, then add to a baking dish.
- Top with crushed chips.
- Bake at 350 degrees for 40 minutes.
- Note: Can be prepared a day ahead and stored in the refrigerator until baking time.
