Special Tuna Salad
|2 cans of solid white albacore tuna in olive oil|
|1 tbs fresh lemon juice|
|1 hard cooked egg, chopped|
|1 rib of celery, minced|
|1/2 red bell pepper, chopped|
|1 medium onion, minced|
|2 tbs carrot, peeled and grated|
|2 tsp fresh mint, chopped|
|1 tbs fresh dill, minced|
|1/2 tsp ground cumin|
|5 dashes of cayenne pepper|
|2 tbs mayonnaise|
|1/2 cup of frozen peas, cooked|
|butter lettuce cups for serving|
|fresh parsley for garnish|
- Add ingredients except for the lettuce in a large bowl.
- Gently combine throughly.
- Cover and chill for several hours, then mix again.
- Spoon evenly into 8 lettuce cups.
