Kabasa Arabic Spice Mix
Ingredients
1 tbs chili powder | ||
1/2 tbs cayenne pepper | ||
1/2 tbs cumin | ||
2 tsp cinnamon | ||
2 tsp cloves | ||
2 tsp black pepper | ||
1/2 tbs cardamon | ||
1/2 tbs nutmeg | ||
2 tsp ginger powder | ||
1 tsp saffron powder | ||
1 tsp tumeric |
Kabasa is a version of a classic Arabian spice mix used in the ancient Saudi Arabian dish called Al Kabasa, a chicken and rice dish which is fragrant and lightly spiced. It is thought to originate from the nomadic Bedouin tribes.
Directions:
- Add all ingredients to a bowl and mix well.
- Spice mixture may be used for chicken, pork or beef.
- Recipe may be doubled or tripled.
