|1/3 cup sugar|
|2 tsp cornstarch|
|2 tsp grated lemon rind|
|1/4 cup lemon juice|
|1/4 cup butter|
|2 beaten eggs|
- In a sauce pan combine the sugar and cornstarch.
- Stir in the lemon peel and lemon juice, then add the butter
- Cook and stir until thickened and bubbly.
- Stir half of the lemon mixture into the eggs.
- Pour the egg mixture into the pan.
- Cook and stir for 2 minutes.
- Cover and let cook.
