Broccoli Casserole

Ingredients

  • 1 lb of broccoli florets
  • 1/2 cup mayonnaise
  • 1 can cream of mushroom soup
  • 1 medium onion, minced
  • 2 cups sharp cheddar cheese, grated
  • 2 eggs
  • 1 cup Ritz crackers, crushed
  • Cook broccoli in boiling water for about 5 minutes. Remove from pan and rinse under cold water.
  • Mix broccoli with remaining ingredients, except crackers.
  • Place in a 8×8 baking dish and add the crushed crackers on top.
  • Bake in a preheated 350 degree oven for 30 minutes.
