Cold Cucumber Yogurt Soup
Ingredients
3 medium cucumbers, peeled, seeded and grated | ||
2 garlic cloves, minced | ||
2 tsp fresh mint, chopped | ||
2 cups plain yogurt | ||
2 cups buttermilk | ||
kosher salt to taste | ||
1 tbs olive oil |
- Mix the first 4 ingredients in a large bowl.
- Stir in the buttermilk. Mix well.
- Add salt to taste.
- Drizzle with the olive oil.
- Chill covered in the refrigerator for several hours.
