Cold Cucumber Yogurt Soup

Ingredients

  • 3 medium cucumbers, peeled, seeded and grated
  • 2 garlic cloves, minced
  • 2 tsp fresh mint, chopped
  • 2 cups plain yogurt
  • 2 cups buttermilk
  • kosher salt to taste
  • 1 tbs olive oil
  • Mix the first 4 ingredients in a large bowl.
  • Stir in the buttermilk. Mix well.
  • Add salt to taste.
  • Drizzle with the olive oil.
  • Chill covered in the refrigerator for several hours.
