Court Bouillon
This is a poaching liquid the is perfect for poaching, fish, crabs or lobsters.Ingredients:
- 1 quart fish stock
- 1 cup white wine
- 1/2 cup lemon juice
- 1 onion, quartered
- 2 bay leaves
- Add all ingredients to a large sauce pan and bring to a boil, then reduce heat to a simmer.
- Add seafood as necessary for gently poaching.
- Lobsters and crabs should take about 10-15 minutes at a simmer and fish fillets should take about 5 minutes.
