Court Bouillon

This is a poaching liquid the is perfect for poaching, fish, crabs or lobsters.Ingredients:

  • 1 quart fish stock
  • 1 cup white wine
  • 1/2 cup lemon juice
  • 1 onion, quartered
  • 2 bay leaves
  • Add all ingredients to a large sauce pan and bring to a boil, then reduce heat to a simmer.
  • Add seafood as necessary for gently poaching.
  • Lobsters and crabs should take about 10-15 minutes at a simmer and fish fillets should take about 5 minutes.
