Hawaiian Pineapple Delight


  • 2 ripe pineapples
  • Creme de menthe to taste
  • Confectioners sugar to taste
  • Cut the pineapples in half lengthwise, the halve crosswise.
  • Cut the pulp from the rind by cutting along the length between the rind and the pulp.
  • Cut out the fibrous core and discard.
  • Cut the pulp into bite-sized pieces and arrange on top of the rind.
  • Splash with creme de menthe and dust with confectioners sugar.
