Indian Lemon Rice
|1 cup Basmati rice|
|1 tsp mustard seeds|
|1 tsp blackgram dal (available at Asian or Indian grocery)|
|1 tsp yellow split peas|
|1 green chilie|
|1/8 tsp oil|
|1/4 tsp fenugreek|
|1 tsp turmeric|
|1/4 tsp ginger|
|1/4 tsp cumin|
|6 tbs lemon juice|
|fresh cilantro to taste|
|fresh curry leaves to taste (available at Indian or Asian grocery)|
- Cook rice according to package directions.
- Fry the mustard seeds, blackgram dal, and yellow split peas in oil. Set aside.
- Fry chili, fenugreek, turmeric, ginger and cumin in oil and add them to the cooked rice.
- Add fresh lemon juice, cilantro and curry leaves.
