Indian Lemon Rice

Ingredients

  • 1 cup Basmati rice
  • 1 tsp mustard seeds
  • 1 tsp blackgram dal (available at Asian or Indian grocery)
  • 1 tsp yellow split peas
  • 1 green chilie
  • 1/8 tsp oil
  • 1/4 tsp fenugreek
  • 1 tsp turmeric
  • 1/4 tsp ginger
  • 1/4 tsp cumin
  • 6 tbs lemon juice
  • fresh cilantro to taste
  • fresh curry leaves to taste (available at Indian or Asian grocery)
  • Cook rice according to package directions.
  • Fry the mustard seeds, blackgram dal, and yellow split peas in oil. Set aside.
  • Fry chili, fenugreek, turmeric, ginger and cumin in oil and add them to the cooked rice.
  • Add fresh lemon juice, cilantro and curry leaves.
