Indian Lemon Rice

Ingredients

1 cup Basmati rice
1 tsp mustard seeds
1 tsp blackgram dal (available at Asian or Indian grocery)
1 tsp yellow split peas
1 green chilie
1/8 tsp oil
1/4 tsp fenugreek
1 tsp turmeric
1/4 tsp ginger
1/4 tsp cumin
6 tbs lemon juice
fresh cilantro to taste
fresh curry leaves to taste (available at Indian or Asian grocery)
  • Cook rice according to package directions.
  • Fry the mustard seeds, blackgram dal, and yellow split peas in oil. Set aside.
  • Fry chili, fenugreek, turmeric, ginger and cumin in oil and add them to the cooked rice.
  • Add fresh lemon juice, cilantro and curry leaves.
