Indian Lemon Rice
- 1 cup Basmati rice
- 1 tsp mustard seeds
- 1 tsp blackgram dal (available at Asian or Indian grocery)
- 1 tsp yellow split peas
- 1 green chilie
- 1/8 tsp oil
- 1/4 tsp fenugreek
- 1 tsp turmeric
- 1/4 tsp ginger
- 1/4 tsp cumin
- 6 tbs lemon juice
- fresh cilantro to taste
- fresh curry leaves to taste (available at Indian or Asian grocery)
- Cook rice according to package directions.
- Fry the mustard seeds, blackgram dal, and yellow split peas in oil. Set aside.
- Fry chili, fenugreek, turmeric, ginger and cumin in oil and add them to the cooked rice.
- Add fresh lemon juice, cilantro and curry leaves.
