Italian Red Clam Sauce
Ingredients
4 tbs olive oil | ||
4 garlic cloves, mince | ||
1 small onion, chopped | ||
2 tsp oregano | ||
4 fresh basil leaves, chopped | ||
4 fresh basil leaves, chopped | ||
2 tsp thyme | ||
kosher salt and fresh cracked black pepper to taste | ||
2 (28oz) cans peeled Italian tomatoes | ||
1 (8oz) can of clam juice | ||
1 (8oz) can of clam juice |
Directions:
- In a large sauce pan or stock pot heat the oil using medium high heat and saute the garlic and onions until golden. Take care not to burn the garlic.
- Add all ingredients except for the clams and let sauce simmer for 1 hour. Break up the tomatoes with a wooden spoon.
- Ten minutes before serving add the clams and heat gently for several minutes.
- Serve over pasta.
