Italian Red Clam Sauce

Ingredients

  • 4 tbs olive oil
  • 4 garlic cloves, mince
  • 1 small onion, chopped
  • 2 tsp oregano
  • 4 fresh basil leaves, chopped
  • 4 fresh basil leaves, chopped
  • 2 tsp thyme
  • kosher salt and fresh cracked black pepper to taste
  • 2 (28oz) cans peeled Italian tomatoes
  • 1 (8oz) can of clam juice
  • 1 (8oz) can of clam juice
Directions:

  • In a large sauce pan or stock pot heat the oil using medium high heat and saute the garlic and onions until golden. Take care not to burn the garlic.
  • Add all ingredients except for the clams and let sauce simmer for 1 hour. Break up the tomatoes with a wooden spoon.
  • Ten minutes before serving add the clams and heat gently for several minutes.
  • Serve over pasta.
