Sauteed Baby Spinach


  • 1/2 lb baby spinach
  • 1/4 shallots, minced
  • 1/2 tbs olive oil
  • Pinch of black pepper

  • Preheat a large saute pan on high heat.
  • Add the oil and shallots and saute until tender. About 2-3 minutes
  • Add the baby spinach and season with salt and pepper.
  • cook only until the spinach leaves are wilted.
  • Remove from pan at once, and serve.
