Sauteed Soft Shell Crabs
- 12 soft shell crabs, cleaned
- kosher salt and fresh cracked black pepper to taste
- canola oil for frying
- Dry crabs with paper towels.
- Sprinkle all over with salt and pepper.
- Lightly coat with flour, knocking off any excess.
- Cook crabs in a frying pan in just enough oil to prevent sticking.
- Fry until browned, about 5 minutes on each side.
