Sauteed Veal Chops with Apples
Ingredients
2/3 cup unsalted butter | ||
6 veal chops (1/2 lb each) | ||
kosher salt and white pepper to taste | ||
3 tbs fresh lemon juice | ||

12 granny smith apples, peeled, cored and quartered | ||
4 tbs unsalted butter, softened | ||

1 tbs chopped chives |
- In a large saute pan, heat the 2/3 cup butter until it slightly browns.
- Season the chops with salt and white pepper, then saute them gently in the butter. About 5-8 minutes, turning once, or until desired doneness is achieved.
- Transfer the chops to a warm platter and cover them with aluminum foil and place them in a warm oven.
- Add the lemon juice and cream to the saute pan and simmer for about 20 minutes.
- Strain the sauce through a fine wire mesh strainer into another pan and keep warm.
- Preheat the oven to 450 degrees.
- Put the apples in a shallow, greased oven proof baking dish and dot with the 4 tbs of butter and sprinkle with the sugar, evenly. Bale for 10-12 minutes.
- Arrange the chops on a serving platter, surround with the apples and coat with the sauce.
- Garnish with the chives.
