Swordfish with Avocado Butter
Ingredients
1/2 cup light soy sauce | ||
1 garlic clove, crushed | ||

1/2 cup olive oil | ||
1/4 cup fresh lemon juice | ||
2 tsp fresh parsley, minced | ||
8 (1 inch) thick swordfish steaks 4 oz each. |
Avocado Butter:
- 1/2 cup unsalted butter, softened
- 1/2 cup ripe avocado, mashed
- 2 garlic cloves, minced
- 2 and 1/2 tbs fresh parsley, minced
- 5 and 1/2 tbs fresh lemon juice
- pinch kosher salt
- Make a marinade by mixing together the first 6 ingredients.
- Cut shallow slits in both sides of the fish.
- Place the steaks in a baking dish in a single layer.
- Pour the marinade over the fish and refrigerate covered for 4-5 hours, turning several times.
- Preheat the broiler while making the avocado butter.
- To make the avocado butter whip the butter with a wire whisk until very creamy, then beat in the avocado, parsley, lemon juice and salt.
- Drain the fish, reserving the marinade.
- Broil the fish for 9-10 minutes, turning once and brushing occasionally with the marinade.
- Remove the fish to a platter, and drizzle the fish steaks with about a tbs of the avocado butter.
