Yucca Chips


  • 1 large Yucca root
  • oil for deep frying
  • kosher salt
  • Peel the Yucca root and slice crosswise, as thinly as possible.
  • Add the sliced root to ice water and let set for 30 minutes. Drain on paper towels.
  • Add oil to a sauce pan or deep fryer 1/3 full and heat to 370 degrees.
  • Fry chips until golden and crisp. Drain on paper towels and sprinkle with salt.
