Caribbean Curry Powder


  • 1 oz coriander seeds
  • 2 oz cumin seeds
  • 1 tbs poppy seeds
  • 1 tbs cloves
  • 1 tbs brown mustard seeds
  • 1 oz peppercorns
  • 2 oz ground turmeric
  • 1 oz ground ginger


  • Toast the coriander, cumin, poppy and mustard seeds in a heavy frying pan until the mustard seeds begin to pop.
  • Grind the mixture in a spice grinder or mortar and mix with the turmeric and ginger. Process until smooth.
  • Put mixture in a glass jar for future use.
