- 3 cups chopped, half ripe mangoes
- 1 cup water
- 1 cup sugar
- 1/8 tsp ground ginger
- 1/8 tsp ground cinnamon
- pinch of kosher salt
This is a very versatile sauce that works well drizzled over meat, chicken or fish. It also may be used over ice cream, pies or cakes.
- Put the mangoes and water in a sauce pan and cook, covered until the mangoes are soft.
- Add the sugar, ginger, cinnamon and a pinch of salt.
- Continue to cook uncovered for another 10 minutes, or until the sauce is thick and well blended.
