Mango Sauce


  • 3 cups chopped, half ripe mangoes
  • 1 cup water
  • 1 cup sugar
  • 1/8 tsp ground ginger
  • 1/8 tsp ground cinnamon
  • pinch of kosher salt

This is a very versatile sauce that works well drizzled over meat, chicken or fish. It also may be used over ice cream, pies or cakes.


  • Put the mangoes and water in a sauce pan and cook, covered until the mangoes are soft.
  • Add the sugar, ginger, cinnamon and a pinch of salt.
  • Continue to cook uncovered for another 10 minutes, or until the sauce is thick and well blended.
