Mignonette Sauce


  • 1 tbs whole peppercorns, crushed
  • 1/2 cup red wine vinegar
  • 2 tbs shallots, minced
  • kosher salt to taste

Mignonette sauce is a French preparation that is traditionally drizzled over oysters on the half shell.


  • Using the edge of a sauce pan crush the peppercorns into coarse pieces.
  • Add the peppercorns to a bowl, then add the shallots and red wine vinegar.
  • Add a little kosher salt to taste and mix well.
  • Use to drizzle over fresh oysters on the half shell.
