St. Kitts Hot Pepper Sauce
- 1/2 cup red hot peppers, seeded and minced
- 1/2 cup onions, minced
- kosher salt
- Combine the peppers and onions in a small, heavy sauce pan and simmer over low heat.
- Do not add any water, the peppers and onions will give off enough liquid.
- When the mixture is thick, season with salt and use as a sauce with any meat or fish.
