St. Kitts Hot Pepper Sauce


  • 1/2 cup red hot peppers, seeded and minced
  • 1/2 cup onions, minced
  • kosher salt


  • Combine the peppers and onions in a small, heavy sauce pan and simmer over low heat.
  • Do not add any water, the peppers and onions will give off enough liquid.
  • When the mixture is thick, season with salt and use as a sauce with any meat or fish.
