Avocado Pesto
Ingredients
1 avocado, pitted and chopped | ||
1 cup fresh basil leaves | ||
2 garlic cloves | ||
1 lemon, zested and juiced | ||
kosher salt and fresh cracked black pepper to taste | ||
1 tbs olive oil | ||
2-3 tbs room temperature water |
Directions:
- Combine all ingredients, except for the water in a food processor.
- Process mixture until smooth.
- If necessary add a little water to thin out the sauce.
- Use as a sauce drizzled over chicken or fish or if left thick, use as a dipping sauce.
