Avocado Pesto


  • 1 avocado, pitted and chopped
  • 1 cup fresh basil leaves
  • 2 garlic cloves
  • 1 lemon, zested and juiced
  • kosher salt and fresh cracked black pepper to taste
  • 1 tbs olive oil
  • 2-3 tbs room temperature water


  • Combine all ingredients, except for the water in a food processor.
  • Process mixture until smooth.
  • If necessary add a little water to thin out the sauce.
  • Use as a sauce drizzled over chicken or fish or if left thick, use as a dipping sauce.
