Roasted Red Pepper Relish


  • 1 (8oz) jar of roasted red peppers, drained and chopped
  • 2 cloves garlic minced
  • 1 small sweet onion, minced
  • 1 tbs fresh mint, chopped
  • 1/2 tbs fresh lemon juice
  • 1 tbs extra virgin olive oil

This relish is perfect to garnish on chicken, seafood or lamb as well as spread over crusty bread slices.

  • Add all ingredients to a non metal bowl and mix well.
  • Cover and refrigerate for 1 hour before serving.
  • Serve as a relish over chicken, seafood or lamb.
