Roasted Red Pepper Relish
- 1 (8oz) jar of roasted red peppers, drained and chopped
- 2 cloves garlic minced
- 1 small sweet onion, minced
- 1 tbs fresh mint, chopped
- 1/2 tbs fresh lemon juice
- 1 tbs extra virgin olive oil
This relish is perfect to garnish on chicken, seafood or lamb as well as spread over crusty bread slices.
- Add all ingredients to a non metal bowl and mix well.
- Cover and refrigerate for 1 hour before serving.
- Serve as a relish over chicken, seafood or lamb.
