Spicy Avocado Salsa
Ingredients
2 avocados, peeled, seeded and diced | ||
juice of 2 limes | ||
1 tomato, peeled, seeded and dice | ||
1 shallot, diced | ||
2 tbs red bell pepper, diced | ||
1 clove garlic, minced | ||
2 tbs fresh parsley, chopped | ||
2 tbs fresh cilantro, chopped | ||
1/2 tsp oregano | ||
1 tbs extra virgin olive oil | ||
1 tbs white wine vinegar | ||
1 tsp fresh lemon juice | ||
1/2 tsp Dijon mustard | ||
1 Habanaero pepper, seeded and dices | ||
kosher salt to taste |
- Add lime juice, lemon juice, shallot, garlic, olive oil, wine vinegar and Dijon mustard to a non reactive bowl. Whisk to combine.
- Add all other ingredients to a large bowl and pour the lime juice mixture over.
- Gently combine, cover and chill for at least 1 hour.
- Serve with chips or atop tacos and enchiladas etc.
