Spicy Avocado Salsa
|2 avocados, peeled, seeded and diced|
|juice of 2 limes|
|1 tomato, peeled, seeded and dice|
|1 shallot, diced|
|2 tbs red bell pepper, diced|
|1 clove garlic, minced|
|2 tbs fresh parsley, chopped|
|2 tbs fresh cilantro, chopped|
|1/2 tsp oregano|
|1 tbs extra virgin olive oil|
|1 tbs white wine vinegar|
|1 tsp fresh lemon juice|
|1/2 tsp Dijon mustard|
|1 Habanaero pepper, seeded and dices|
|kosher salt to taste|
- Add lime juice, lemon juice, shallot, garlic, olive oil, wine vinegar and Dijon mustard to a non reactive bowl. Whisk to combine.
- Add all other ingredients to a large bowl and pour the lime juice mixture over.
- Gently combine, cover and chill for at least 1 hour.
- Serve with chips or atop tacos and enchiladas etc.
