Tomato and Cheese Quesadillas
|2 flour tortillas|
|3 tbs fresh mozzarella cheese|
|1 scallion, minced|
|2 small sun dried tomatoes, packed in oil|
|2 tbs chopped ripe tomatoes|
|5 fresh basil leaves, cut into ribbons|
|kosher salt and fresh cracked black pepper|
- Brush each tortilla with oil or butter.
- Sprinkle ingredients over 1 tortilla and top with the other.
- Grill for about 2-3 minutes on each side until cheese is melted and the tortilla is slightly crispy.
- Cut into wedges and serve.
