Tomato and Cheese Quesadillas
- 2 flour tortillas
- 3 tbs fresh mozzarella cheese
- 1 scallion, minced
- 2 small sun dried tomatoes, packed in oil
- 2 tbs chopped ripe tomatoes
- 5 fresh basil leaves, cut into ribbons
- kosher salt and fresh cracked black pepper
- Brush each tortilla with oil or butter.
- Sprinkle ingredients over 1 tortilla and top with the other.
- Grill for about 2-3 minutes on each side until cheese is melted and the tortilla is slightly crispy.
- Cut into wedges and serve.
