Tomato and Cheese Quesadillas


  • 2 flour tortillas
  • 3 tbs fresh mozzarella cheese
  • 1 scallion, minced
  • 2 small sun dried tomatoes, packed in oil
  • 2 tbs chopped ripe tomatoes
  • 5 fresh basil leaves, cut into ribbons
  • kosher salt and fresh cracked black pepper
  • Brush each tortilla with oil or butter.
  • Sprinkle ingredients over 1 tortilla and top with the other.
  • Grill for about 2-3 minutes on each side until cheese is melted and the tortilla is slightly crispy.
  • Cut into wedges and serve.
