Fresh Mozzarella Salad


  • 1 lb ripe tomatoes, cut in half
  • 1/2 lb bocconcini Mozzarella 
  • 4 oz arugula
  • 4 tbs extra virgin olive oil
  • 2 tbs fresh lemon juice
  • 4 tbs balsamic vinegar
  • kosher salt and black pepper to taste
  • In a bowl mix the lemon juice and balsamic vinegar. While whisking drizzle in the olive oil and whisk until well combined.
  • Add all other ingredients to a bowl, then drizzle dressing over.
  • Season with salt and pepper and serve.
