Fresh Mozzarella Salad
|1 lb ripe tomatoes, cut in half|
|1/2 lb bocconcini Mozzarella|
|4 oz arugula|
|4 tbs extra virgin olive oil|
|2 tbs fresh lemon juice|
|4 tbs balsamic vinegar|
|kosher salt and black pepper to taste|
- In a bowl mix the lemon juice and balsamic vinegar. While whisking drizzle in the olive oil and whisk until well combined.
- Add all other ingredients to a bowl, then drizzle dressing over.
- Season with salt and pepper and serve.
