Indian Curried Lentil Soup
Ingredients
1 cup red lentils | ||
5 cups water | ||
1 tbs butter | ||
1 tbs brown rice | ||
1 onion, chopped | ||
2 cloves garlic, chopped | ||
1 tbs curry powder | ||
1 tsp cinnamon | ||
1 tsp chili powder | ||
1 tsp coriander | ||
juice of 1 lemon | ||
2 tbs fresh cilantro | ||
kosher salt and black pepper to taste |
Directions:
- Add the butter to a large saucepan, then add the onions and garlic and saute for several minutes or until tender, but not browned.
- Stir in the curry powder, cinnamon, chili powder, coriander, rice, lentils and water.
- Bring to a boil for 45 minutes to 1 hour.
- Add the lemon juice, then season with salt and pepper.
- Sprinkle in the cilantro.
- Serve with warm naan bread.
