Indian Curried Lentil Soup

Ingredients

  • 1 cup red lentils
  • 5 cups water
  • 1 tbs butter
  • 1 tbs brown rice
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 tbs curry powder
  • 1 tsp cinnamon
  • 1 tsp chili powder
  • 1 tsp coriander
  • juice of 1 lemon
  • 2 tbs fresh cilantro
  • kosher salt and black pepper to taste
Directions:
  • Add the butter to a large saucepan, then add the onions and garlic and saute for several minutes or until tender, but not browned.
  • Stir in the curry powder, cinnamon, chili powder, coriander, rice, lentils and water.
  • Bring to a boil for 45 minutes to 1 hour.
  • Add the lemon juice, then season with salt and pepper.
  • Sprinkle in the cilantro.
  • Serve with warm naan bread.
