Italian Garlic and Mint Sauce
- 6 cloves garlic, minced
- 2 tsp capers, rinsed and drained
- 10 mint leaves
- 1 egg yolk
- juice of 1/2 lemon
- kosher salt
- 6 tbs extra virgin olive oil
This sauce works well draped over lamb, chicken, pork or vegetables.
- In a food processor, combine the garlic, capers, mint, egg yolk and lemon juice, then season with salt.
- Puree while adding the olive oil in a slow steady stream and process until smooth.
