Italian Garlic and Mint Sauce


  • 6 cloves garlic, minced
  • 2 tsp capers, rinsed and drained
  • 10 mint leaves
  • 1 egg yolk
  • juice of 1/2 lemon
  • kosher salt
  • 6 tbs extra virgin olive oil

This sauce works well draped over lamb, chicken, pork or vegetables.

  • In a food processor, combine the garlic, capers, mint, egg yolk and lemon juice, then season with salt.
  • Puree while adding the olive oil in a slow steady stream and process until smooth.
