|1 lb edamame|
|1 tbs canola oil|
|zest from 1 lemon|
|1 small bunch mint, chopped|
|1 tsp red pepper flakes|
|kosher salt and black pepper to taste|
- Heat canola oil in a nonstick frying pan and add edamame. Saute using medium heat for about 3-5 minutes, turning frequently.
- Meanwhile add lemon zest, mint, pepper flakes, to a bowl and mix well.
- When edamame are done add them to the bowl with the lemon and mint and mix well.
- Season with salt and white pepper.
