Spiced Endamame


  • 1 lb edamame
  • 1 tbs canola oil
  • zest from 1 lemon
  • 1 small bunch mint, chopped
  • 1 tsp red pepper flakes
  • kosher salt and black pepper to taste
  • Heat canola oil in a nonstick frying pan and add edamame. Saute using medium heat for about 3-5 minutes, turning frequently.
  • Meanwhile add lemon zest, mint, pepper flakes, to a bowl and mix well.
  • When edamame are done add them to the bowl with the lemon and mint and mix well.
  • Season with salt and white pepper.
