Fancy Chicken Salad


  • 2 cups cooked, cubed chicken breast
  • 1 cup chopped celery
  • 1 cup seedless grapes, halved
  • 1/2 cup slivered almonds, toasted
  • 1 and 1/4 cups mayonnaise
  • 1 tbs lemon juice
  • kosher salt and black pepper to taste
  • In a large bowl combine chicken, celery, grapes, almonds, mayonnaise and lemon juice.
  • Season with salt and pepper.
  • Mix well, cover and refrigerate for 1-2 hours.
  • Serve in lettuce cups or on crusty bread as a sandwich.
