Fancy Chicken Salad
- 2 cups cooked, cubed chicken breast
- 1 cup chopped celery
- 1 cup seedless grapes, halved
- 1/2 cup slivered almonds, toasted
- 1 and 1/4 cups mayonnaise
- 1 tbs lemon juice
- kosher salt and black pepper to taste
- In a large bowl combine chicken, celery, grapes, almonds, mayonnaise and lemon juice.
- Season with salt and pepper.
- Mix well, cover and refrigerate for 1-2 hours.
- Serve in lettuce cups or on crusty bread as a sandwich.
