Fancy Chicken Salad
|2 cups cooked, cubed chicken breast|
|1 cup chopped celery|
|1 cup seedless grapes, halved|
|1/2 cup slivered almonds, toasted|
|1 and 1/4 cups mayonnaise|
|1 tbs lemon juice|
|kosher salt and black pepper to taste|
- In a large bowl combine chicken, celery, grapes, almonds, mayonnaise and lemon juice.
- Season with salt and pepper.
- Mix well, cover and refrigerate for 1-2 hours.
- Serve in lettuce cups or on crusty bread as a sandwich.
