Herring in Cream Sauce


  • 2 (8oz) jars pickled herring
  • 3/4 pint sour cream
  • 4 tbs liquid from herring
  • 1/4 cup heavy cream
  • 3 tbs sugar
  • 1 spanish onion, thinly sliced
  • Drain herring and pat dry, reserving liquid from the jar.
  • Blend together the sour cream, 4 tbs of the reserved liquid, cream and sugar.
  • Add the onion and herring, stir to coat with the sauce and refrigerate until ready to serve.
