Jamaican Saltfish Fritters

  • 1/2 lb of saltfish
  • 1 onion
  • 1 scotch bonnet pepper
  • 1 clove garlic
  • 3 cups flour
  • pinch of kosher salt
  • 1/2 tsp black pepper
  • 2 cups water
  • oil for frying
  • Soak the salt fish in water, overnight changing water once.
  • Flake the fish into small pieces after soaking
  • Sift the flour into a bowl, then stir in the saltfish, onion, garlic, salt and pepper.
  • Slowly stir in the water and stop adding the water when the mixture becomes sticky.
  • Fill a frying pan about 1/2 inch deep with oil and heat.
  • Spoon fritters, about 1 heaping tbs into the pan, then fry for 10 minutes, then turn over and fry the other side for about 5 minutes. Repeat until all the fritters are golden on both sides.
  • Drain on paper towels.
