- 6 hard boiled eggs
- 4 scallions, trimmed and thinly sliced
- 2 tbs sour cream
- 1 tsp lemon juice
- 2 tbs caviar
- kosher salt and black pepper to taste
- lemon rind and caviar for garnish
- Gently mix all ingredients with the egg yolks.
- Spoon ingredients back into the egg whites.
- Garnish with extra caviar and lemon rind.
