Creole Tomato Sauce
- 3 tbs olive oil
- 1 medium onion, minced
- 1 large tomato, peeled and chopped
- 1 frresh hot pepper, seeded and chopped
- kosher salt and black pepper to taste
- 1 tbs vinegar
- Heat oil in a small sauce pan and saute the onion until tender, but not browned.
- Add the tomato, hot pepper, salt and pepper to taste and cook, stirring for about 5 minutes or until well blended and fairly thick.
- Stir in the vinegar and mix well.
- Serve with any meat or fish.
