Creole Tomato Sauce


  • 3 tbs olive oil
  • 1 medium onion, minced
  • 1 large tomato, peeled and chopped
  • 1 frresh hot pepper, seeded and chopped
  • kosher salt and black pepper to taste
  • 1 tbs vinegar


  • Heat oil in a small sauce pan and saute the onion until tender, but not browned.
  • Add the tomato, hot pepper, salt and pepper to taste and cook, stirring for about 5 minutes or until well blended and fairly thick.
  • Stir in the vinegar and mix well.
  • Serve with any meat or fish.
