Shrimp and Cucumber Deviled Eggs
|6 hard boiled eggs|
|1 cup cooked small peeled shrimp, reserving 12 for garnish the rest chopped|
|1 oz cucumber, peeled and diced|
|1 tsp ketchup|
|1 tbs mayonnaise|
|1/2 tsp fresh lemon juice|
|kosher salt and black pepper to taste|
|fennel sprigs for garnish|
- Mix all ingredients with the egg yolks, then spoon back into the egg whites.
- Garnish with the reserved shrimp and fennel sprigs.
