Shrimp and Cucumber Deviled Eggs
Ingredients
6 hard boiled eggs | ||
1 cup cooked small peeled shrimp, reserving 12 for garnish the rest chopped | ||
1 oz cucumber, peeled and diced | ||
1 tsp ketchup | ||
1 tbs mayonnaise | ||
1/2 tsp fresh lemon juice | ||
kosher salt and black pepper to taste | ||
fennel sprigs for garnish |
- Mix all ingredients with the egg yolks, then spoon back into the egg whites.
- Garnish with the reserved shrimp and fennel sprigs.
