Shrimp and Cucumber Deviled Eggs
- 6 hard boiled eggs
- 1 cup cooked small peeled shrimp, reserving 12 for garnish the rest chopped
- 1 oz cucumber, peeled and diced
- 1 tsp ketchup
- 1 tbs mayonnaise
- 1/2 tsp fresh lemon juice
- kosher salt and black pepper to taste
- fennel sprigs for garnish
- Mix all ingredients with the egg yolks, then spoon back into the egg whites.
- Garnish with the reserved shrimp and fennel sprigs.
